Vegan chocolate pudding with caramelized pears and toasted sesame seeds, yummy! No idea how I came up with this recipe. I stood in the kitchen and was hungry. Normally I would have one cup of green smoothie to one or two slices of bread. You know, just to make sure to boost my immune system with important vitamins my body needs to stay healthy. Especially in this „colder“ times.
This recipe might be richer than a green smoothie, but not less healthy:-) I like to have this one as a dessert as well, so good!! So, mission accomplished!
Chocolate Pudding with Caramelized Pear

Ingredients
CHOCOLATE PUDDING:
- 5 dates, pitted & soaked in hot water for 10 minutes
- 1 tbsp. flaxseeds
- 1 tbsp. chia seeds
- 150 g avocado, peeled and cored
- 280 g almond milk, unsweetened
- 2 tbsp. cacao powder, unsweetened
- 1 green cardamom, skin removed (or 1/4 tsp. cardamom powder)
- 1 tsp. vanilla extract
- 1 tbsp. agave nectar
CARAMELIZED PEAR:
- 1 tbsp. coconut oil
- 1 tbsp. agave nectar
- 1/2 big pear, finely sliced
- 2 tbsp. toasted sesame seeds
Instructions
- CHOCOLATE PUDDING: Drain dates and place along with the remaining ingredients for the pudding into a blender. Blend for at least 2 minutes.
- CARAMELIZED PEAR: In a middle-sized pan, heat coconut oil. Add agave nectar and cook pear slices on both sides until golden brown. Remove from pan.
- Serve chocolate pudding with caramelized pear slices and toasted sesame seeds.
